Ingredients:
• 8 ounces (225 grams) spaghetti
• 4 ounces (115 grams) pancetta or bacon, diced
• 2 cloves garlic, minced
• 2 large eggs
• 1/2 cup (120 ml) grated Parmesan cheese
• Salt and black pepper, to taste
• Fresh parsley, chopped (for garnish)
Instructions:
1. Cook the spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Drain the cooked spaghetti, reserving about 1/2 cup of the pasta water.
2. Cook the pancetta/bacon: In a large skillet, cook the pancetta or bacon over medium heat until it turns crispy and golden. Remove the cooked pancetta/bacon from the skillet, leaving the rendered fat in the pan.
3. Prepare the sauce: In a small bowl, whisk together the eggs, grated Parmesan cheese, salt, and black pepper until well combined.
4. Combine the ingredients: Return the cooked pancetta/bacon to the skillet with the rendered fat. Add the minced garlic and cook over medium heat for about 1 minute until fragrant. Reduce the heat to low.
5. Add the spaghetti: Immediately after reducing the heat, add the drained spaghetti to the skillet and toss it with the pancetta/bacon and garlic, coating the pasta evenly with the rendered fat.
6. Add the sauce: Pour the egg and cheese mixture over the spaghetti. Working quickly, toss the spaghetti with the sauce until the eggs thicken, but be careful not to scramble them. If the sauce seems too thick, add a small amount of the reserved pasta water to loosen it up.
7. Serve: Once the sauce has thickened and coated the spaghetti, remove the skillet from heat. Divide the spaghetti carbonara into individual serving plates. Garnish with chopped parsley and an extra sprinkle of grated Parmesan cheese, if desired.
